- 1 cup all-purpose flour
- 1 cup sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup mandarin orange juice
- 1/4 cup vegetable oil
- 1/2 tsp vanilla extract
- 2 eggs
- 1/2 cup mandarin oranges, drained and chopped
Instructions

Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.

In a mixing bowl, combine flour, sugar, baking powder, baking soda, and salt.

In another bowl, whisk together mandarin orange juice, vegetable oil, vanilla extract, and eggs.

Gradually add the wet ingredients to the dry ingredients, mixing until well combined.

Fold in the chopped mandarin oranges.

Pour the batter into the prepared cake pan and smooth the top.

Bake for 25 minutes, or until a toothpick inserted into the center comes out clean.
