Ingredients

  • 2 lemons, zest and juice
  • 150g self-raising flour
  • 150g unsalted butter, softened
  • 150g caster sugar
  • 3 large eggs

Instructions

  1. Preheat the oven to 180°C/350°F. Grease a 20cm round cake tin and line with parchment paper.

  2. In a large bowl, cream together the butter and sugar until light and fluffy. Gradually add the eggs, beating well after each addition.

  3. Sift in the flour and gently fold until well combined. Add the zest and juice of 1 lemon and mix until evenly distributed.

  4. Pour the batter into the prepared tin and smooth the top. Bake for 35-40 minutes or until a skewer inserted into the center comes out clean.

  5. In a small saucepan, heat the juice of the remaining lemon with 50g caster sugar over low heat until the sugar has dissolved.

  6. While the cake is still warm, pierce it all over with a skewer and pour the lemon syrup over the top. Allow the cake to cool completely in the tin before removing.
