Ingredients
- 2 lemons (zest and juice)
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup milk
- 1 tbsp poppy seeds
Instructions

Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

In a medium bowl, cream the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition.

In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.

Stir in the lemon zest, lemon juice, and poppy seeds.

Pour the batter into the prepared cake pan and smooth the top with a spatula.

Bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Remove from the oven and let the cake cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.

Once cooled, you can frost the cake with lemon glaze or dust it with powdered sugar if desired.
