  • 4 eggs
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup strawberry jelly
  • Powdered sugar, for dusting


  1. Preheat the oven to 375°F (190°C). Grease and line a 10×15-inch jelly roll pan with parchment paper.

  2. In a large mixing bowl, beat the eggs and sugar together until light and fluffy. Stir in the vanilla extract.

  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the egg mixture, mixing until just combined.

  4. Pour the batter into the prepared pan and spread it evenly. Bake for 10-12 minutes, or until the cake is golden brown and springs back when lightly touched.

  5. Meanwhile, spread a clean kitchen towel on the counter and dust it with powdered sugar. Once the cake is done baking, immediately invert it onto the towel. Carefully remove the parchment paper.

  6. Starting at one short end, roll the cake up tightly with the towel. Allow it to cool completely in the rolled-up position.

  7. Carefully unroll the cooled cake and spread the strawberry jelly evenly over the surface. Roll the cake back up, this time without the towel, using the parchment paper to help you.

  8. Place the jelly roll seam side down on a serving platter. Dust with powdered sugar before slicing and serving.
