  • 1/2 cup shortening
  • 1 cup mashed potatoes (warm )
  • 1/2 tsp. salt
  • 1 cup nuts (or coconut)
  • 2 tsp. baking powder
  • 2 cups flour
  • 2 cups sugar
  • 1 tsp. soda
  • 1 tsp. vanilla
  • 1/2 cup milk
  • 2 tsp. cocoa
  • 4 eggs (separated, add 2 yolks to mixture, save other 2)

Frosting :

  • 1 cup milk
  • 1 cup sugar
  • 1 tbsp. butter
  • 1 cup coconut
  • 2 egg yolks (beaten)
  • 1 tbsp. flour
  1. After preparing rest of mixture, beat the 4 egg whites and fold into mixture.
  2. Bake at 350 degrees for 30 minutes.
  3. To make frosting, combine all ingredients, cook until it thickens.
  4. Add coconut and stir, spread over cake.
