  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 1/2 cup mashed bananas (about 1 large banana)
  • 1/4 cup crushed pineapple, drained
  • 1/4 cup chopped pecans
  • 1/2 tsp vanilla extract
  • 1/4 cup buttermilk
  • 1/4 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/4 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  3. In a separate large bowl, mix together the sugar and vegetable oil. Add the mashed bananas, crushed pineapple, chopped pecans, vanilla extract, and buttermilk. Stir until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Pour the batter into the prepared cake pan and smooth the top.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  8. In a small bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Spread the cream cheese frosting over the cooled cake.
  9. Serve and enjoy!
