  • 1 cup of all-purpose flour
  • 1 cup of granulated sugar
  • 1 tsp of baking soda
  • 1/2 tsp of salt
  • 1/2 cup of crushed pineapple, drained
  • 1/2 cup of flaked coconut
  • 1/2 cup of chopped pecans
  • 1/2 cup of unsalted butter, melted
  • 1 tsp of vanilla extract
  • 2 large eggs

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking dish.

  2. In a large mixing bowl, whisk together the flour, sugar, baking soda, and salt.

  3. Stir in the crushed pineapple, coconut, and chopped pecans.

  4. Add the melted butter, vanilla extract, and eggs to the bowl. Mix until well combined.

  5. Pour the batter into the prepared baking dish and spread it evenly.

  6. Bake for 25 minutes or until a toothpick inserted into the center comes out clean.

  7. Remove from the oven and let the cake cool completely before serving.
