Ingredients
Batter
- 2 cups brown sugar, firmly packed
- 2 cups all purpose flour
- ¾ cup butter , or margarine
- 1 tsp cinnamon
- 1 egg
- 2 tsp vanilla extract
- 1 cup hot coffee
- 1 tsp baking soda
Icing
- 1 cup confectioners sugar
- 1 tbsp water
- ½ tsp vanilla extract
Instructions
- Mix brown sugar, flour, margarine and cinnamon together until lumpy.

Set aside 1 cup of the mixture.

Mix egg, vanilla, and soda (which has been dissolved in hot coffee). Add to remaining dry mixture.
- Pour into a 8 or 9 inch baking pan which has been greased and floured.

Sprinkle with the 1 cup dry mixture.

Bake for 30 to 40 minutes in a 350 degree F oven.
- Drizzle with icing while still warm.
- To make icing, blend above ingredients until smooth in small mixing bowl.
