Ingredients

Batter

  • 2 cups brown sugar, firmly packed
  • 2 cups all purpose flour
  • ¾ cup butter , or margarine
  • 1 tsp cinnamon
  • 1 egg
  • 2 tsp vanilla extract
  • 1 cup hot coffee
  • 1 tsp baking soda

Icing

  • 1 cup confectioners sugar
  • 1 tbsp water
  • ½ tsp vanilla extract

Instructions

  1. Mix brown sugar, flour, margarine and cinnamon together until lumpy.
  2. Set aside 1 cup of the mixture.

  3. Mix egg, vanilla, and soda (which has been dissolved in hot coffee). Add to remaining dry mixture.

  4. Pour into a 8 or 9 inch baking pan which has been greased and floured.
  5. Sprinkle with the 1 cup dry mixture.

  6. Bake for 30 to 40 minutes in a 350 degree F oven.

  7. Drizzle with icing while still warm.
  8. To make icing, blend above ingredients until smooth in small mixing bowl.
