  • 2 tsp Baking Soda
  • ½ tsp Salt
  • 2 tsp Cinnamon Ground
  • 3 large Eggs
  • 2 cups Sugar
  • ¾ cup Vegetable Oil
  • ¾ cup Vanilla Extract
  • 2 cups Carrots grated
  • 8 oz Pineapple drained, Crushed
  • 3.5 oz Coconut Flaked
  • 1 cup Pecans chopped
  • Cream Cheese for topping
  • Buttermilk Glazed for topping


  • Begin this recipe by preheating your oven to 350°.
  • Continue by preparing your cake pans.
  • Line two nine-inch round layer cake pans with wax paper.
  • Lightly grease and flour the paper and then set the pans aside.
  • Combine the flour, baking soda, salt, and cinnamon in a medium bowl.
