Ingredients

  • 2 cups of all-purpose flour
  • 1 1/2 cups of granulated sugar
  • 1/2 cup of unsalted butter, softened
  • 1/2 cup of strong brewed coffee
  • 1/4 cup of milk
  • 2 eggs
  • 1 tsp of baking powder
  • 1/2 tsp of baking soda
  • 1/4 tsp of salt
  • For the crunchy topping:
  • 1/2 cup of granulated sugar
  • 1/4 cup of unsalted butter
  • 2 tbsp of strong brewed coffee
  • 1 cup of crushed coffee-flavored cookies

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy.

  3. Beat in the eggs, one at a time, and then stir in the brewed coffee and milk.

  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  5. Pour the batter into the prepared cake pan and smooth the top with a spatula.

  6. In a small saucepan, combine the sugar, butter, and brewed coffee for the crunchy topping. Cook over medium heat, stirring constantly, until the mixture comes to a boil. Boil for 1 minute, then remove from heat.

  7. Stir in the crushed coffee-flavored cookies and immediately pour the mixture over the cake batter in the pan, spreading it evenly.

  8. Bake for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.

  9. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
