  • 8 egg whites
  • 1 cup of granulated sugar
  • 1/2 cup of all-purpose flour
  • 1/4 cup of unsweetened cocoa powder
  • 1/4 teaspoon of cream of tartar
  • 1/4 teaspoon of salt
  • 1 teaspoon of vanilla extract

Instructions

  1. Preheat the oven to 325°F (165°C).

  2. In a large bowl, beat the egg whites until frothy.

  3. Gradually add the sugar and continue beating until stiff peaks form.

  4. In a separate bowl, sift together the flour, cocoa powder, and salt.

  5. Gently fold the dry ingredients into the egg white mixture, being careful not to overmix.

  6. Fold in the vanilla extract.

  7. Spoon the batter into an ungreased angel food cake pan.

  8. Smooth the top with a spatula.

  9. Bake for 40 minutes or until the cake springs back when touched.

  10. Invert the pan and let the cake cool completely before removing it from the pan.
