Ingredients

  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup mashed ripe bananas
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup whole milk
  • 1 (3.4 oz) package instant vanilla pudding mix
  • 2 cups cold milk
  • 2 cups whipped cream
  • 1 ripe banana, sliced (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking dish.

  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

  3. In a separate bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the mashed bananas and vanilla extract.

  4. Gradually add the dry ingredients to the banana mixture, alternating with the milk. Begin and end with the dry ingredients.

  5. Pour the batter into the prepared baking dish and smooth the top with a spatula. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely.

  6. Using the handle of a wooden spoon, poke holes all over the cake, making sure to go all the way to the bottom.

  7. In a mixing bowl, whisk together the instant vanilla pudding mix and 2 cups of cold milk until smooth and thickened. Pour the pudding over the cake, filling the holes. Spread the remaining pudding evenly over the top of the cake.

  8. Chill the cake in the refrigerator for at least 2 hours to allow the pudding to set.

  9. Before serving, spread the whipped cream over the top of the cake. Garnish with sliced bananas.

  10. Slice and serve the Banana Pudding Poke Cake.
