How To Make Banana Coffee Cake

Enjoy a plate of this moist and buttery coffee cake for tea time, packed with sweet bananas, and topped with a crisp pecan and brown sugar streusel.

Ingredients

  • ½cupvegetable oil
  • 1cupsugar
  • 2large eggs,beaten
  • 1cupbanana,ripe, mashed
  • ¼cupsour cream
  • 1tspvanilla extract
  • 1½cupsflour
  • 1tspbaking soda
  • 1tspbaking powder
  • 1cuppecans,chopped

For Streusel Topping:

  • ½cuppecans,chopped
  • ¼cupbrown sugar,packed
  • 1tspground cinnamon

Instructions

  1. Preheat the oven to 350 degrees F, then spray a springform pan with baking spray.

  2. Whisk together the sugar, oil, eggs, banana, sour cream, and vanilla extract in a large bowl together, until smooth.

  3. Sift the flour, baking soda and baking powder in a second bowl, then add it to the wet mixture. Whisk until just combined.

  4. Mix the pecans, brown sugar, and cinnamon in a bowl, then sprinkle it over the cake batter.

  5. Bake for 45 minutes, or until a toothpick inserted into the center comes out clean.

  6. Serve warm and enjoy!
