Ingredients
- 4 cup apples, golden delicious is best, diced , raw
- ½ cup oil
- 2 cup sugar
- 2 large eggs, slightly beaten
- 2 tsp cinnamon
- 2 tsp vanilla extract
- 2 cup flour
- 1 ½ cup walnuts, chopped
- ½ tsp salt
- 2 tsp baking soda
Instructions

Mix apples, oil and sugar together in a bowl
- Add eggs and stir together.
- Mix in all the rest of the ingredients (with a large spoon rather than a mixer).

Bake in a 9 X 13-inch greased pan, or make into cupcakes.
- Batter is very thick.

Bake in 350 degrees F oven for 45 minutes for cake; about 30 minutes for cupcakes.
- Frost with cream cheese frosting.
