How To Make Vegan Banh Mi
Turning vegan may look challenging for some, especially for those who can’t turn their eyes away from meat. But they just haven’t found these sumptuous vegan recipes that even non-vegans will surely enjoy!

Ingredients
- 4 French baguettes
- 1 cup of julienned carrots
- 1 cup of julienned daikon radish
- 1 cup of thinly sliced cucumber
- 1 cup of fresh cilantro leaves
- 1 cup of fresh mint leaves
- 1 cup of pickled jalapenos
- 1 block of tofu, sliced and marinated in soy sauce and sesame oil
- 4 tablespoons of vegan mayonnaise
- 4 tablespoons of soy sauce
- 2 tablespoons of rice vinegar
- 2 tablespoons of agave syrup
- 1 tablespoon of sesame oil
- Salt and pepper to taste
Instructions

Preheat the oven to 350°F. Slice the baguettes in half and toast them in the oven for about 5 minutes until they are slightly crispy.

In a small bowl, whisk together the vegan mayonnaise, soy sauce, rice vinegar, agave syrup, sesame oil, salt, and pepper to make the dressing.

Heat a pan over medium heat and cook the marinated tofu slices until they are golden brown on both sides.

Assemble the banh mi sandwiches by spreading the dressing on both sides of the baguettes.

Layer the tofu slices, julienned carrots, daikon radish, cucumber, cilantro, mint leaves, and pickled jalapenos on top.
