  • 2tbspolive oil
  • ½onion,chopped
  • 1clovegarlic,crushed
  • 3cupswater
  • 16ozdry black-eyed peas,(1 package)
  • 3tbspcider vinegar
  • 2tbspwhite sugar
  • 1tspsalt
  • 1dashred pepper flakes,or to taste

Instructions

  1. Heat oil in a large saucepan over medium-high heat. Add onions; saute for 5 to 7 minutes until softened and translucent.

  2. Stir in garlic; cook for about 2 minutes until fragrant.

  3. Add water, black-eyed peas, vinegar, sugar, salt, and red pepper flakes.

  4. Cook for 60 to 90 minutes until peas are tender.
