How To Make Vegan Eggplant Panini Recipe
This delicious vegan panini recipe is packed with flavor and nutrition from grilled eggplant, onions, peppers, and vegan cheese.

Ingredients
- 1 large eggplant, sliced
- 1 onion, sliced
- 1 red bell pepper, sliced
- 4 slices of vegan cheese
- 4 ciabatta rolls
- 2 tbsp of olive oil
- 1 tsp of dried oregano
- 1/2 tsp of garlic powder
- Salt and pepper to taste
Instructions

Preheat grill pan over medium-high heat.

Brush eggplant, onion, and red bell pepper with olive oil, oregano, garlic powder, salt and pepper.

Grill the vegetables for 5 minutes on each side, until charred and tender.

Lay one slice of vegan cheese on each ciabatta roll.

Top with eggplant, onion, and red bell pepper.

Grill the paninis for 2-3 minutes on each side, until cheese is melted.
