How To Make Vegan Eggplant Panini Recipe

This delicious vegan panini recipe is packed with flavor and nutrition from grilled eggplant, onions, peppers, and vegan cheese.

Ingredients

  • 1 large eggplant, sliced
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 4 slices of vegan cheese
  • 4 ciabatta rolls
  • 2 tbsp of olive oil
  • 1 tsp of dried oregano
  • 1/2 tsp of garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat grill pan over medium-high heat.

  2. Brush eggplant, onion, and red bell pepper with olive oil, oregano, garlic powder, salt and pepper.

  3. Grill the vegetables for 5 minutes on each side, until charred and tender.

  4. Lay one slice of vegan cheese on each ciabatta roll.

  5. Top with eggplant, onion, and red bell pepper.

  6. Grill the paninis for 2-3 minutes on each side, until cheese is melted.

  7. Serve hot.
