Ingredients

  • 8 oz whole wheat spaghetti
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 onion, finely chopped
  • 4 cups fresh spinach, chopped
  • 1 cup cherry tomatoes, halved
  • 1/4 cup vegetable broth
  • 1/4 cup nutritional yeast
  • Salt and pepper to taste

Instructions

  1. Cook the spaghetti according to package instructions. Drain and set aside.

  2. In a large skillet, heat the olive oil over medium heat. Add the garlic and onion and sauté until fragrant and translucent.

  3. Add the chopped spinach and cook until wilted.

  4. Stir in the cherry tomatoes and vegetable broth. Cook for another 2-3 minutes.

  5. Add the cooked spaghetti to the skillet and toss to combine. Cook for an additional 2-3 minutes, until heated through.

  6. Stir in the nutritional yeast, salt, and pepper.

  7. Serve hot and enjoy!
