
How To Make Spicy Vegan Potato Curry
Turning vegan may look challenging for some, especially for those who can’t turn their eyes away from meat. But they just haven’t found these sumptuous vegan recipes that even non-vegans will surely enjoy!

Ingredients
- 4 medium potatoes, peeled and diced
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 green chili, finely chopped
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp garam masala
- 1 cup chopped tomatoes
- 1 cup coconut milk
- Salt to taste
- Fresh cilantro, for garnish
- 2 tbsp oil
Instructions

Heat oil in a pan and add cumin seeds. Let them splutter.

Add chopped onion, minced garlic, and green chili. Sauté until onions are golden brown.

Add turmeric powder, red chili powder, and garam masala. Mix well.

Add chopped tomatoes and cook until they are soft and mushy.

Add diced potatoes and coat them well with the spice mix.

Pour in coconut milk and mix well. Simmer for 15-20 minutes or until potatoes are cooked through.

Season with salt according to taste.

Garnish with fresh cilantro and serve hot with rice or naan bread.
