How To Make Quick Easy Chickpea and Coconut Dahl
Turning vegan may look challenging for some, especially for those who can’t turn their eyes away from meat. But they just haven’t found these sumptuous vegan recipes that even non-vegans will surely enjoy!

Ingredients
- 1 tbsp vegetable oil
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 inch piece of ginger, grated
- 2 tbsp curry powder
- 2 cups cooked chickpeas
- 1 can (13.5 oz) coconut milk
- 1 cup vegetable broth
- 1 tsp salt
- 1/2 tsp black pepper
- Juice of 1 lemon
- Fresh cilantro, for garnish
Instructions

Heat the vegetable oil in a large pot over medium heat. Add the diced onion, minced garlic, and grated ginger. Cook until the onion becomes translucent, about 5 minutes.

Add the curry powder to the pot and cook for an additional minute, stirring constantly.

Add the cooked chickpeas, coconut milk, vegetable broth, salt, and black pepper to the pot. Stir well to combine.

Bring the mixture to a simmer and let it cook for 15 minutes, stirring occasionally.

Remove the pot from the heat and stir in the lemon juice.

Serve the dahl hot, garnished with fresh cilantro. Enjoy with rice or naan bread.
