How To Make Free-form Florentine Pie

Preheat the oven to 400°F (200°C).
Roll out one sheet of puff pastry and place it on a baking sheet lined with parchment paper.
In a bowl, mix together the spinach, cheese, bacon, eggs, salt, and pepper.
Spoon the mixture onto the center of the pastry, leaving a border around the edges.
Carefully fold the edges of the pastry over the filling, creating a rustic, free-form shape.
Brush the pastry with beaten egg for a golden crust.
Bake for 30-40 minutes, or until the pastry is golden brown and the filling is cooked through.
Allow the pie to cool for a few minutes before serving.
