How To Make Spiced Coconut Porridge with Cranberry & Orange Compote

Ingredients
- 1 cup rolled oats
- 2 cups coconut milk
- 1 cup water
- 1 cinnamon stick
- 1 star anise
- 1/4 tsp ground cardamom
- 1/4 tsp ground ginger
- 1/4 tsp ground nutmeg
- 2 tbsp maple syrup
- 1/2 cup dried cranberries
- Zest of 1 orange
- Juice of 1 orange
Instructions

In a medium saucepan, combine the rolled oats, coconut milk, water, cinnamon stick, star anise, cardamom, ginger, and nutmeg. Bring to a boil over medium heat.

Reduce heat to low and simmer for 15-20 minutes, stirring occasionally, until the porridge is thick and creamy.

In a separate small saucepan, combine the dried cranberries, orange zest, orange juice, and maple syrup. Cook over medium heat for 5-7 minutes, until the cranberries have softened and the compote has thickened slightly.

Remove the cinnamon stick and star anise from the porridge and discard. Serve the porridge hot, topped with the cranberry and orange compote.

Optional: Garnish with additional dried cranberries and a sprinkle of cinnamon.
