How To Make Banana Pecan Baked Oatmeal

Ingredients
- 2½cupsrolled old-fashioned oats
- ⅔cupFisher Pecanschopped, plus more for serving
- 1tspbaking powder
- 1tspground cinnamon
- ¼tspsalt
- 1¼bananaswell mashed, ripened
- 1tsplemon juice
- 1⅔cupmilkplus more for serving
- ¼cupmaple syrupplus more for serving
- 2eggslarge
- 1tspvanilla extract
- 3tbspcoconut oilmelted
Instructions

Preheat oven to 350 degrees F.

Spray an 8×8-inch baking dish with non-stick cooking spray, then set aside.

In a medium mixing bowl whisk together oats, Fishers Pecans, baking powder, cinnamon and salt.

In a separate mixing bowl, stir together mashed bananas with lemon juice.

Add in milk, maple syrup, eggs, and vanilla extract and whisk until well blended.

Stir in coconut oil.

Pour milk mixture into the oat mixture then stir to combine.

Pour mixture into prepared baking dish.

Bake for 30 minutes until set.

Serve warm with milk, additional pecans and maple syrup, and enjoy!
