How To Make Pumpkin Chocolate Chip Baked Oatmeal Cups

Munch on this high fiber dessert that is these baked oatmeal cups; bursting with Fall flavors from pumpkin purée, cinnamon, nutmeg, and chocolate chips!

Preparation: 15 minutes
Cooking: 30 minutes
Total: 45 minutes
Serves:

Ingredients

  • cups1% milk
  • 1large egg
  • ½cuphoney
  • ¾cuppumpkin puree
  • 1tspcinnamon
  • ¼tspnutmeg
  • 1tspvanilla
  • cupsquick oat,or large oat
  • ½cupchocolate chips,optional

Instructions

  1. Preheat the oven to 350 degrees F.

  2. In a bowl, add the milk, egg, honey, pumpkin puree, cinnamon, nutmeg, and vanilla until combined. Stir in the oats and chocolate chips.

  3. Transfer the oat mixture to 15 silicone muffin cups, or a muffin tin lined with cupcake liners.

  4. Bake for about 30 minutes until lightly golden on top.

  5. Serve and enjoy!
