How To Make One Bowl Baked Oatmeal

Baked oatmeal is a scrumptious breakfast casserole for the whole family. A concoction of soft, chewy, and creamy oatmeal topped with berries and walnuts.

Cooking: 35 minutes
Total: 40 minutes

Serves:

Ingredients

  • 1¾cupsmilk,dairy or nondairy
  • 2large eggs
  • ½cuppure maple syrup
  • ¼cupunsalted butter,melted and slightly cooled
  • ¼cupunsweetened applesauce,or mashed banana
  • 3cupsold fashioned whole oats
  • 1tspbaking powder
  • 1tspground cinnamon
  • 1tsppure vanilla extract
  • ¼tspsalt
  • 1½cupsmixed berries,fresh or frozen, do not thaw

For Optional Topping:

  • ½cupwalnuts,or pecans, chopped

Instructions

  1. Adjust the oven rack to the lower third position and preheat the oven to 350 degrees F. Spray a 9×9-inch or 11×7-inch baking pan with nonstick spray.

  2. Whisk all of the ingredients together in 1 large bowl. Pour into a prepared baking pan. Top with nuts, if desired.

  3. Bake for 35 minutes or until the center appears almost set. Cool for 5 minutes before serving.

  4. Spoon or slice and serve with yogurt. Enjoy!
