How To Make Oatmeal Scotchies

Prepare these oatmeal scotchies for your next afternoon snack! It’s made with filling oatmeal and sweet butterscotch chips for a new flavor.

  • 8tbspunsalted butter,softened
  • cupsugar
  • cupbrown sugar,packed
  • 1large egg
  • 2tspvanilla extract
  • ½cupflour
  • ½tspbaking soda
  • cupsold fashioned oats
  • 1cupbutterscotch chips


  1. Preheat the oven to 350 degrees F.

  2. To a stand mixer, add the butter and sugar on medium speed, beating for 1 to 2 minutes until light and fluffy.

  3. Add in the egg and vanilla until well mixed, then then on low speed, add in the flour and baking soda until just combined.

  4. Add in the oats and butterscotch chips using a 2 tablespoon measure until just combined on low speed.

  5. Scoop the dough onto a baking sheet, then bake for 8 to 9 minutes.

  6. Serve warm, and enjoy!
