
How To Make Carrot Cake Oatmeal
Start the day right with a fiber-rich bowl of this carrot cake oatmeal! It combines tender grated carrots, oats, and sugar for a mellow bite.
Ingredients
- 1 medium carrot
- ½ cup rolled oats
- kosher salt, (1 pinch)
- 1⁄4 tsp pure vanilla extract
- ⅛ tsp ground cinnamon
- 1 tbsp raisins, optional
- 1 tbsp brown sugar, plus more to taste
- 1 tbsp unsalted butter, plus more to taste
- 2 tbsp walnuts, toasted and coarsely chopped

Peel the carrot and grate it into a small saucepan. Add 1 cup of water and salt. Bring to a boil over high heat. Stir in the oats, vanilla, cinnamon, and raisins. Adjust the heat to maintain a steady simmer and cook, stirring frequently, for about 5 minutes until the oats and carrot are tender.

Take the pan off the heat. Stir in the brown sugar. Transfer to a bowl. Dot the top with bits of the butter. Sprinkle with more brown sugar and top with the walnuts.
