How To Make Biscoff Oatmeal Bars

Who knew oatmeal bars could be this rich and decadent? The healthy treats are oozing with layers of melty chocolate and Biscoff spread.

Preparation: 10 minutes
Cooking: 30 minutes
Total: 40 minutes

  • stickunsalted butter,(¾ cup)
  • ¾cupbrown sugar,packed
  • 1cupold fashioned oats
  • tspvanilla extract
  • 1tspbaking soda
  • 1cupwhite flour
  • 1cupbiscoff spread
  • 1cupmilk chocolate chips

  1. Preheat the oven to 350 degrees F. Line an 8×8-inch pan with parchment paper and set aside.

  2. In a large bowl, add the butter and melt most of the way.

  3. Add in the brown sugar, oats (do not use quick oats!), and vanilla. Whisk until well combined.

  4. Add in the baking soda and flour. Mix.

  5. Take half of this mixture and press it firmly into the bottom of the prepared pan.

  6. Bake for 10 to 12 minutes or until lightly browned at the edges.

  7. Meanwhile, place the biscoff spread in a microwave safe bowl and microwave for 30 seconds.

  8. When the bottom layer is down baking, remove and sprinkle the chocolate chips over it.

  9. Pour the biscoff evenly over the chocolate chips.

  10. Sprinkle the remaining oat mixture over top of everything.

  11. Bake for another 15 to 20 minutes or until lightly browned at the edges.

  12. Remove and allow to cool. The cookie butter will be very gooey and soft at first, these bars take a while to be firm — allow to completely cool before cutting.
