
How To Make Turkey Stuffed Taco Potato
A creative way to elevate your meals is achieved with this oven-baked stuffed taco, made with tender potatoes, and loaded with turkey, for a fuller meal!

Ingredients
- 4russet potatoes,medium large
- salt,to taste
- olive oil
- 1onion,diced
- 1jalapeño,diced
- 1lbground turkey
- 1pkgtaco seasoning mix
- 3tomatoes,diced
- ¼cupcilantro,chopped
- 1lime,juiced
For Topping:
- guacamole
- sour cream
- cheddar cheese,shredded
Instructions

Preheat the oven to 350 degrees F.

Wash and dry the potatoes. Using a fork, pierce the potatoes all over. Coat with olive oil and salt.

Bake the potatoes directly on the oven rack for about 1 hour.

Heat oil in a large skillet over medium/high heat. Add the onion and jalapeño, then cook until starting to soften.

Add the ground turkey, then break apart and season with the entire taco seasoning packet. Cook through.

Add tomato and allow the mixture to simmer for about 2 to 3 minutes.

Remove from heat, then finish with cilantro and lime juice.

Remove the potatoes from the oven and allow to cool slightly.

Cut a wedge from the center, then fill with the taco mix. Top with cheese, guacamole, and sour cream.
