Ingredients
- 2 lb suadero meat
- 2 tbsp beef rendered fat (or vegetable oil)
- 12 corn tortillas
- 2 cups water, plus more to cover the meat
- ½ white onion, finely diced
- 1 small bunch of cilantro, finely chopped
- salt and pepper, to taste
- hot salsa, of choice
Instructions
- In a pot, add meat, beef fat or oil, and water. Boil for about 2 hours or until meat is tender. Add more water if needed.
- Once meat is tender and water has reduced. Transfer the meat to a cutting board and shred. Return to pot and saute until lightly brown.
- Warm the corn tortillas to form the tacos, top with the chopped onion and cilantro, and season with salt. Sometimes I cook the meat in advance and just brown on the griddle while warming the tortillas when ready to serve.
- Warm the corn tortillas in a skillet or pan. Add chopped onions and cilantro. Top with the meat and season with salt and pepper. Add hot salsa if preferred. Serve and enjoy!
