How To Make Sheet Pan Sweet Potato Tacos
This sweet potato tacos recipe, loaded with baked sweet potatoes and black beans, brings a healthier twist to the classic dish with extra flavor from salsa.

Ingredients
- 1large sweet potato,cut into ½-inch moons
- 1cupred onion,julienned
- 2clovesgarlic,minced
- 19ozblack beans,(1 can), rinsed
- 1packtaco seasoning
- 1lime
- 3tbspolive oil
- 1avocado,sliced
- 4flour tortillas,or corn tortillas
- cheddar cheese,to taste
- salsa,any type
Instructions

Preheat the oven to 425 degrees F.

On a sheet pan combine sweet potato, red onion, black beans, garlic, olive oil, and packet of taco seasoning and mix to coat.

Bake in the oven for 20 to 25 minutes, until sweet potatoes are fork-tender. Upon removing from the oven, squeeze a lime over the top.

Warm tortillas, wrapped in damp paper towels, in the microwave for 20 seconds.

Assemble by scooping the veggie filling into tortillas and topping with sliced avocados, cheese, and salsa.
