  • 4salmon filletscooked
  • 4flour tortillas12 ½-inch, warmed
  • 2cupsfresh pineapplesmall, diced
  • 1limejuiced
  • 1red bell peppersmall, (or yellow or orange pepper) cored and diced
  • 1jalapeno peppersmall, (seeded and diced )
  • ¼cupred oniondiced
  • ¼cupfresh cilantrominced
  • kosher saltto taste
  • black pepperto taste


  1. Chunk up salmon fillets and add an equal amount of salmon onto the middle of each flour tortilla.

  2. In a medium-sized mixing bowl stir together pineapple, lime juice, red bell pepper, jalapeno pepper, red onion, and cilantro. Taste and season with the desired amount of kosher salt and black pepper. If the salsa seems dry add in a little more lime juice.

  3. Top each taco with the fresh pineapple salsa.
