How To Make Low Carb Turkey Taco Stuffed Avocados

A lite take on tacos is achieved by substituting the tacos with riped avocados. This turkey taco stuffed avocado is healthier and even more delicious!

Preparation: 5 minutes
Cooking: 20 minutes
Total: 25 minutes
Serves:

Ingredients

  • 4small avocados
  • 1small lime
  • cooking spray
  • ½lb93% lean ground turkey
  • ¼small yellow onion
  • ½tspgarlic powder
  • ½tspcumin
  • ½tspkosher salt
  • ½tspchili powder
  • ¼tsporegano,dried
  • ¼cuptomato sauce,canned
  • 2tbspwater

For serving:

  • ½cupMexican cheese,part-skim shredded
  • ¼cupcherry tomatoes,diced
  • sour cream,or Greek yogurt, optional for topping

Instructions

  1. Halve and pit avocados. Using a spoon, scoop out a some of the avocado, to make a larger well.

  2. Dice reserved avocado and set aside for later. Squeeze lime juice over all avocados to prevent browning.

  3. Heat a medium skillet over high heat. Spray with oil.

  4. When hot, add the ground turkey, spices, and onion. Cook, for about 5 minutes, breaking up the meat with a wooden spoon.

  5. Add tomato sauce and water. Cook for about 6 to 8 minutes, stirring until cooked through. Remove from heat.

  6. Fill each avocado half with turkey, then top with cheese, reserved avocado, tomato, and Greek yogurt or sour cream, if desired. Eat with a spoon!
