These 30-minute garlic chicken tacos are made with a tender chicken- cilantro salsa mix that’s stuffed in soft tortillas, for a delectably filling meal!

Ingredients

  • 1tbspolive oil
  • 4garlic cloves,minced
  • 1lbchicken tenderloins,diced
  • ½onion,diced
  • ½red bell pepper,diced
  • 15ozblack beans,(½ can), rinsed and drained
  • ¼cupfresh cilantro,chopped, or to taste
  • ½cupchunky salsa
  • 4large flour tortillas,or as needed
  • ¼cupMexican cheese blend,shredded, or to taste

Instructions

  1. Heat the olive oil in a skillet over medium-high heat, then sauté the garlic for about 1 minute until fragrant.

  2. Add the chicken, then cook and stir for about 5 to 7 minutes until the chicken is no longer pink in the center.

  3. Mix the onion, red bell pepper, black beans, and cilantro into the chicken, then sauté for about 5 minutes until onion is tender. Stir the salsa into the chicken mixture for about 1 to 2 minutes until heated through.

  4. Spoon the chicken mixture into tortillas and top with Mexican cheese blend.

  5. Serve and enjoy!
