How To Make Easy Egg Tacos

For breakfast, make an easy, savory fusion dish by creating this egg taco meal made flavorful with vegetables and spices. Cook this for under 30 minutes.

  • 2tspvegetable oil
  • ½smallred or green pepper,diced
  • ½jalapeno pepper,seeded and finely diced
  • 1clovegarlic,minced
  • cupdiced ham
  • ½tspchili powder
  • 4eggs
  • ¼tspsalt
  • ¼tspblack pepper
  • 2tspbutter
  • 4smallwhole wheat,or regular flour tortillas, warmed
  • ½cupTex-Mex,shredded or Cheddar cheese
  • 2green onions,chopped
  • ¼cupsalsa
  • 1tbspfresh coriander,chopped


  1. In a medium non-stick skillet, heat oil over medium heat; saute red and jalapeno peppers and garlic for 2 minutes or until softened.

  2. Add ham and chili powder; saute 2 minutes or until heated through. Remove to bowl; cover to keep warm.

  3. In a small bowl or measuring cup, whisk eggs, salt, and pepper.

  4. Melt butter in the same skillet on medium heat; add eggs and cook, stirring gently, until set but still soft, about 2 minutes.

  5. Spoon eggs on each tortilla, top with ham mixture, cheese and onion. Serve with salsa and/or coriander, if desired.
