How To Make Black Bean Tacos
Enjoy this filling black beans tacos recipe that’s completely meatless. It’s a flexible dish because you have the freedom to switch-up the ingredients.
Ingredients
- 2tspolive oil
- ½onionfinely diced
- 2garlic clovesminced
- 1½cupsfrozen corn
- 15ozblack beansdrained and rinsed
- 1½tspchili powder
- ½tspcumin
- ½cupsalsa
- salt & pepperto taste
- 8corn tortillasor flour tortillas, 6 – inch
- toppingsas desired
Instructions

Cook onion and garlic in olive oil over medium heat until tender, about 4 minutes.

Add corn, black beans, seasonings, and salsa. Simmer 5 to 6 minutes or until liquid has evaporated.

Slightly mash some of the beans if desired. Taste and season with salt and pepper to taste.

Spoon into tortillas and top as desired.
