How To Make Black Bean Tacos

Enjoy this filling black beans tacos recipe that’s completely meatless. It’s a flexible dish because you have the freedom to switch-up the ingredients.

Serves:

Ingredients

  • 2tspolive oil
  • ½onionfinely diced
  • 2garlic clovesminced
  • cupsfrozen corn
  • 15ozblack beansdrained and rinsed
  • tspchili powder
  • ½tspcumin
  • ½cupsalsa
  • salt & pepperto taste
  • 8corn tortillasor flour tortillas, 6 – inch
  • toppingsas desired

Instructions

  1. Cook onion and garlic in olive oil over medium heat until tender, about 4 minutes.

  2. Add corn, black beans, seasonings, and salsa. Simmer 5 to 6 minutes or until liquid has evaporated.

  3. Slightly mash some of the beans if desired. Taste and season with salt and pepper to taste.

  4. Spoon into tortillas and top as desired.
