How To Make Texas Cowboy Stew
This Texas cowboy stew is a hearty meal to prepare for a weekend dinner. Filled with flavorful ingredients and tastes best when it simmers in a slow cooker.

Ingredients
- 2lbsground beef
- 16ozkielbasa sausage,sliced into ½-inch pieces, 2 packages
- 2garlic cloves,chopped
- 1onion,chopped
- 14½oztomatoes,peeled and diced, drained, 2 cans
- 4medium baking potatoes,peeled and diced
- 15ozpinto beans,with liquid, 2 cans
- 15⅕ozwhole kernel corn,with liquid, 2 cans
- 14½oztomatoes with green chile peppers,diced, with liquid, 1 can
- 10ozmixed vegetables,frozen, 1 package
- 4cupswater
- 2tspground cumin
- 2tspchili powder
- salt and pepper,to taste
Instructions

Crumble the ground beef into a large skillet over medium-high heat. Add the sausage, garlic, and onion.

Cook and stir until the meat is no longer pink. Drain off grease and transfer the contents of the skillet to a large pot.

Pour the tomatoes into the pot with the meat and stir in the potatoes, pinto beans, corn, diced tomatoes with chilies, mixed vegetables, and water.

Season with cumin, chili powder, salt, and pepper. Cover and simmer over medium-low heat for at least 1 hour.
