How To Make Chef John’s Irish Pork Stew Recipe

Ingredients
- 1.5 lbs pork shoulder, cut into chunks
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 carrots, peeled and sliced
- 2 potatoes, peeled and cubed
- 2 cups chicken broth
- 1 cup Guinness stout beer
- 2 tbsp tomato paste
- 1 tbsp worcestershire sauce
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions

Season the pork with salt and pepper.

Heat olive oil in a large pot over medium-high heat. Brown the pork in batches and set aside.

In the same pot, add chopped onions and minced garlic. Cook until onions are translucent.

Add carrots and potatoes to the pot. Stir in tomato paste and cook for 2 minutes.

Deglaze the pot with Guinness stout beer, scraping up any browned bits from the bottom of the pot.

Add chicken broth, Worcestershire sauce, dried thyme, and bay leaf. Bring to a boil.

Reduce heat to low and simmer for 1.5 to 2 hours, or until the pork is tender.

Remove bay leaf and season with salt and pepper to taste.

Serve hot, garnished with fresh parsley.
