  • pound stew meat, diced into 3/4-inch cubes
  • kosher salt
  • freshly ground black pepper , to taste
  • 1 red onion, diced
  • 4 garlic cloves, minced
  • 3 jalapeños, minced
  • 14½ fl oz tomatoes, 1 can, diced
  • 8 fl oz tomato sauce, 1 can

  2. Heat olive oil in a Dutch oven or large pot over medium high heat. Add stew meat and sear until browned, about 2 minutes.

  4. Reduce heat to low; simmer, covered, stirring occasionally, until meat is tender. This takes about 90 to 120 minutes.

  5. Serve immediately with jalapeño Monterey Jack cheese and cornbread, if desired.
