How To Make Spicy Beef Stew with Beans & Peppers

Ingredients
- 1.5 pounds beef stew meat, cut into chunks
- 1 tablespoon vegetable oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 jalapeno pepper, seeded and diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 can (14.5 ounces) diced tomatoes
- 1 can (15.5 ounces) kidney beans, drained and rinsed
- 1 can (15.5 ounces) black beans, drained and rinsed
- 2 cups beef broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
Instructions

Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the beef stew meat and cook until browned on all sides. Remove the beef from the pot and set aside.

In the same pot, add the diced onion, minced garlic, jalapeno pepper, and bell peppers. Cook until the vegetables are softened, about 5 minutes.

Add the diced tomatoes (with their juices), kidney beans, black beans, beef broth, chili powder, cumin, paprika, salt, and pepper. Stir well to combine.

Return the browned beef to the pot and bring the stew to a boil. Reduce heat to low, cover, and simmer for 2 hours, or until the beef is tender.

Serve the spicy beef stew hot, garnished with fresh cilantro.
