How To Make Smoky Chicken, Bean & Kale Stew

Ingredients
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1/2 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 1 large onion, diced
- 3 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 can (15 oz) diced tomatoes
- 2 cups chicken broth
- 2 cups kale, chopped
- 1 can (15 oz) cannellini beans, drained and rinsed
Instructions

In a bowl, combine the smoked paprika, ground cumin, chili powder, garlic powder, salt, and black pepper. Toss the chicken pieces in the spice mixture until well coated.

Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chicken and cook until browned on all sides, about 5 minutes. Remove the chicken from the pot and set aside.

In the same pot, add the diced onion, minced garlic, and diced red bell pepper. Cook until the vegetables are softened, about 5 minutes.

Return the chicken to the pot and add the diced tomatoes and chicken broth. Bring to a simmer and cook for 20 minutes, until the chicken is cooked through and tender.

Stir in the chopped kale and cannellini beans. Cook for an additional 10 minutes, until the kale is wilted and the beans are heated through.
