How To Make Slow-Cooker Spiced Chicken Stew with Carrots

This slow-cooked chicken stew with carrots is loaded full of flavors thanks to the mix of cinnamon, cumin, garlic, and cilantro.

Ingredients

  • 2lbscarrots
  • 8chicken thighs,(about 2½ lbs total), skinless
  • 1clovegarlic
  • 1stickcinnamon
  • ½tspground cumin
  • coarse salt and ground pepper
  • ¼cupgolden raisins
  • ½cupcilantro leaves
  • ¼cupalmonds,sliced
  • couscous

Instructions

  1. Place carrots in slow cooker. In a bowl, toss together chicken, garlic, cinnamon, cumin, salt, and pepper; add to slow cooker.

  2. Cover, and cook on High 4 hours (or on Low for 8 hours), adding raisins 15 minutes before cooking is done.

  3. Using a slotted spoon, transfer chicken and carrots to a dish (remove cinnamon stick); top with cilantro and almonds. Season cooking liquid with salt and pepper; spoon over chicken. Serve with couscous, if desired.
