
How To Make Potato Chicken Stew

Ingredients
- 4 chicken thighs, bone-in and skin-on
- 4 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 3 carrots, sliced
- 3 celery stalks, sliced
- 4 potatoes, peeled and diced
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and black pepper to taste

In a large pot, heat olive oil over medium heat. Season chicken thighs with salt and pepper, then place them in the pot skin-side down. Cook for about 5 minutes until browned, then flip and cook for another 5 minutes. Remove chicken from the pot and set aside.

In the same pot, add diced onion and minced garlic. Sauté until the onion is translucent and fragrant.

Add sliced carrots, celery, and diced potatoes to the pot. Cook for a few minutes until the vegetables start to soften.

Return the chicken thighs to the pot and pour in the chicken broth. Add dried thyme and bay leaf, then season with salt and black pepper to taste.

Bring the stew to a boil, then reduce heat to low and cover the pot. Simmer for about 30 minutes until the chicken is cooked through and the potatoes are tender.

Remove the bay leaf and discard. Use a fork to shred the chicken meat off the bones and stir it back into the stew. Taste and adjust seasonings if needed.
