How To Make Easy White Chicken Chili Recipe

- 1 lb boneless, skinless chicken breasts, diced
- 1 tbsp olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 jalapeno, seeded and diced
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1/2 tsp chili powder
- 4 cups chicken broth
- 2 cans (15.5 oz each) white beans, drained and rinsed
- 1 cup frozen corn
- Juice of 1 lime
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, diced avocado, chopped cilantro
Instructions

In a large pot, heat olive oil over medium heat. Add diced chicken, onion, garlic, and jalapeno. Cook until chicken is browned and onions are translucent.

Stir in cumin, oregano, and chili powder. Cook for another minute to toast the spices.

Pour in chicken broth and bring to a boil. Reduce heat and simmer for 15 minutes.

Add white beans and frozen corn to the pot. Simmer for an additional 10 minutes.
