Ingredients

  • 2 pounds of lamb, cubed
  • 2 tablespoons of olive oil
  • 2 onions, chopped
  • 4 cloves of garlic, minced
  • 4 carrots, sliced
  • 4 potatoes, diced
  • 2 cups of beef broth
  • 1 cup of red wine
  • 2 teaspoons of dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the lamb and cook until browned on all sides. Remove the lamb from the pot and set aside.

  2. In the same pot, add the onions and garlic. Cook until softened and fragrant.

  3. Return the lamb to the pot and add the carrots, potatoes, beef broth, red wine, dried thyme, salt, and pepper. Bring to a boil.

  4. Reduce heat to low, cover the pot, and simmer for about 2 hours or until the lamb is tender.

  5. Serve hot with crusty bread.
