  • 1.5 lbs beef stew meat, cubed
  • 1 tbsp vegetable oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 2 potatoes, peeled and diced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups beef broth
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper, to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the beef stew meat and cook until browned on all sides. Remove the meat from the pot and set aside.

  2. In the same pot, add the onion and garlic. Cook until the onion is translucent and fragrant.

  3. Add the carrots, celery, and potatoes to the pot. Cook for a few minutes until they start to soften.

  4. Return the browned beef stew meat to the pot.

  5. Stir in the diced tomatoes, beef broth, tomato paste, dried thyme, and dried rosemary. Season with salt and pepper.

  6. Bring the stew to a boil, then reduce the heat to low. Cover the pot and let it simmer for 1.5 to 2 hours, or until the beef is tender and the flavors have melded together.

  7. Serve hot and enjoy!
