Tomato Lentil Curry Recipe

How To Make Tomato Lentil Curry

Made with veggies simmered in coconut curry tomato broth, this hearty Tomato Lentil Curry is delicious and good for you, too!

Preparation: 10 minutes
Cooking: 30 minutes
Total: 40 minutes



  • 1tbspolive oil
  • 1medium white or yellow onion,peeled and diced
  • 3garlic cloves,minced
  • 1tbspground cumin
  • 1tbspground coriander
  • 1tbspground ginger
  • 2tspground turmeric
  • ¼tspcayenne
  • 15ozfire-roasted crushed tomatoes,(2 cans) or 1 can crushed tomatoes + 1 can diced tomatoes
  • 15ozcoconut milk,(1 can) divided
  • cupssweet potato,peeled and finely diced
  • 3cupsveggie stock
  • 1cupgreen or brown lentils,rinsed and picked over
  • fine sea salt and freshly-cracked black pepper,to taste
  • fresh cilantro,chopped for garnish


  1. Heat oil in a large stockpot over medium-high heat. Add onion and sauté for about 5 minutes, stirring occasionally, until softened.  Add garlic and sauté for about 1 minute, stirring occasionally. Then add cumin, coriander, ginger, turmeric, and cayenne and sauté for about 1 minute, stirring frequently.

  2. Add the tomatoes, ⅔ cup of coconut milk, sweet potato, veggie stock, lentils, and stir to combine. Continue cooking until the soup reaches a simmer.

  3. Reduce heat to medium-low to maintain the simmer. Cover and cook for about 20 to 25 minutes, stirring occasionally, until the lentils are tender.

  4. Taste and season with salt and pepper as needed.

  5. Serve warm with rice and/or naan, drizzled with the remaining coconut milk, and garnished with a lot of fresh cilantro.
