How To Make Mary’s Chilli Lamb Skewers with Minted Yogurt Cooler

Ingredients

  • 500g lamb, cut into chunks
  • 2 cloves of garlic, minced
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • Salt, to taste
  • Pepper, to taste
  • 200g Greek yogurt
  • Handful of fresh mint leaves, chopped
  • Juice of 1 lemon
  • Skewers, soaked in water

Instructions

  1. In a bowl, combine the minced garlic, olive oil, chili powder, cumin, coriander, salt, and pepper to make a marinade.

  2. Add the lamb chunks to the marinade and mix until well coated. Allow to marinate for at least 1 hour, or overnight for best flavors.

  3. Preheat your grill or barbecue to medium-high heat.

  4. Thread the marinated lamb chunks onto the soaked skewers.

  5. Grill the skewers for about 10-12 minutes, turning occasionally, until the lamb is cooked to your desired doneness.

  6. While the lamb is grilling, prepare the minted yogurt cooler. In a bowl, mix the Greek yogurt, chopped mint leaves, and lemon juice until well combined. Season with salt to taste.

  7. Serve the grilled lamb skewers with the minted yogurt cooler on the side.
