Ingredients

  • 3 cups of leftover lamb, shredded
  • 4 cups of mixed greens
  • 1 cucumber, sliced
  • 1 bell pepper, chopped
  • 1/2 red onion, sliced
  • 1/4 cup of crumbled feta cheese
  • 2 tablespoons of olive oil
  • 2 tablespoons of lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the shredded lamb, mixed greens, cucumber, bell pepper, and red onion.

  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour over the salad mixture and toss to combine.

  3. Sprinkle with crumbled feta cheese and serve immediately.
