How To Make Leftover Lamb Stew Recipe

Ingredients

  • 2 cups shredded leftover lamb
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 potato, peeled and diced
  • 1 can of diced tomatoes
  • 2 cups of beef broth
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat.

  2. Add the onion and garlic and cook until onion is translucent.

  3. Add the carrots, celery, and potatoes and cook for 5 minutes.

  4. Add the leftover lamb, diced tomatoes, beef broth, thyme, salt, and pepper.

  5. Bring the stew to a boil, reduce heat and simmer for 1 hour.

  6. Serve hot with crusty bread.
